40 Days to NYC

Rest day. And boy did I need it! My thighs (quads) were killing me! Thank goodness I do not have to climb the stairs to the second floor at all this year. Although it is not so much the coming up as it is going down.

Other than that, a pretty unremarkable day. Oh yeah. Made a great dinner in no time at all. In fact, 2o minutes flat. Pasta with fresh tomato sauce & shrimp.

Melt 1 tbsp each butter & olive oil in a pan over medium-high heat. Throw in 2 cloves minced garlic. 30 seconds later, throw in about 15 good-sized FRESH (or at least thawed) shrimp. Cook for about 1-2 minutes on each side and remove before they are fully cooked. You DO NOT want overcooked shrimp. 3 minutes is long enough to cook 'em a little and for them to release some of their yummy shrimp juices.

Add 1 28 oz can of chopped tomatoes to the pan along with 2 tbsp of tomato paste. Stir well, bring to a boil and then let simmer for about 10-15 min or until the sauce does not taste raw anymore (you'll know what I mean) and it has reduced a little. By this time, the spaghetti you have been cooking (you were cooking spaghetti during this time, right?) will be al dente. Taste your sauce and season with s & p. When you love it, throw the pasta and shrimp and toss well. Let sit for a couple minutes over a low heat so the pasta can absorb the sauce and the shrimp will finish cooking.

Serve with a nice green salad and lots of parmesan cheese. But don't bring the leftovers to your office for lunch the next day because the shrimp don't taste as good re-heated and they will stink up the microwave and everyone who uses the microwave after you will be grossed out because their food will taste faintly of shrimp. Not a good way to make friends.
