Day 8

3 Easy miles. So easy in fact, I changed my route and went closer to 4. There is something about running on a weekend morning with almost no other people or cars around.

For an appetizer for dinner, made a grilled margherita pizza. SO GOOD! SO EASY! Impress your guests with this one:
1. pre-made naan or other thin chewy flatbread. I find this base gives that great crunchy yet chewy consistency that it hard to get with raw pizza dough or the premade pizza dough.
2. 1 cup canned chopped tomatoes (the better the quality, the better the pizza)
3. 2 cloves garlic, minced
4. 1 tbsp. olive oil
5. about 1/2-1 cup of shredded cheese (mix of mozzarella and parmesan)
6. 4-5 fresh basil leaves.
7. Salt

Preheat bbq to medium -low (you want the cheese to melt completely without the bottom burning.
Mix together tomatoes, olive oil, garlic and salt to taste.
Put naans on the grill. Immediately put the tomato mixture on the bread and spread around. Add cheese.
Close grill and let cheese melt. Check every couple minutes to make sure bottom is not burning.
WHen cheese is just melted, remove from heat and add basil leaves. Let cool for 2-3 minutes before slicing. Just enough time for the heat from the melted cheese to wilt the basil.

Ummmmmm....The paper...It turns out that when people are notified by email that they were lucky enough to get a ticket to the Michael Jackson memorial, the heading is CONGRATULATIONS! Is it just me or does that seem like a little too celebratory given the occasion?
