Day 4

Running:
Rest day
I know...it's not like I had a terribly tough running schedule this week...everyone gets a rest day and I get one twice a week.

Recipe:
Suppli al Telefono (rice balls stuffed with mozzarella and beef)

Got this recipe from the NY Times: http://www.nytimes.com/2009/06/24/dining/241frex.html but altered it a little bit by adding some fresh basil to the rice mixture and then serving the rice balls with fresh tomato sauce & some parsley & additional freshly grated parmesan. My husband said it was one of the best things he has ever eaten. It was amazing. The only thing I would do differently is make sure that the balls are not too big so that the cheese in the middle really melts and make the rice mixture earlier in the day so that it really has a chance to properly cool and thus, easier to form into balls.

A new "r" in this blog for now on: READING! It seems so obvious! The three R's I love the most! Running, recipes, and reading! Just started What is What by Dave Eggars. Have had it for about a year but was never in the mood to read it.
