Day 3

Running:
3 miles. Ran for groceries and walked home. Humid. Probably should not have eaten that warm, chewy yet crunchy, sweet, fresh and slightly greasy apple fritter before running. Today's lethargy reminded me why I like running in the morning on an empty stomach.

Recipe:
Coconut lemon squares for a Canada Day BBQ. First time making a lemon curd. That part tasted pretty good but the crust could have been better; should have let it bake for another few minutes and cooled for another 1/2 hour before filling.

Was reminded at the said dinner party how much I hate creme caramel and anything else with that texture.

    Coconut lemon squares? I LOVE coconut lemon squares. Is the recipe easy? I could maybe try it with splenda instead of sugar and bran crispbread instead of crust, when I'm on Phase 3 of this diet. OK, so I'm still on Phase 1... it may not be for a while... But recipe, please!

  2. Try the portobello mushroom salad instead. I only say this because I love you. I will bring you HEALTHY lemon squares in the fall
