98 Days to NYC...and jam
5 miles. A pretty uneventful run, except for the fact that Nike+ is not a + at all. It is very discouraging to be notified that I am running a 12.5 minute mile when I know that I am in fact, running much faster. Oh Nike people, why do you insist on teasing me like that?
Went raspberry picking with Billy and we got a little overzealous in our raspberry picking competition and ended up picking enough for two batches of jam & an "its not a kiwi" pie (basically a pie with all of the fruit I currently had in my home except kiwi, as I am deathly allergic to it). So easy to make a fresh fruit pie! So impressive to make a fresh fruit pie!
Get one frozen double crust pie shell & preheat oven to 425.
In a bowl, mix 4 cups of whatever pie-worthy fruit you have (we used peaches, sour cherries, raspberries, and blueberries) about 1/2 a cup of flour, 1/3 a cup of sugar, and 1/2 tsp cinnamon.
Fill one shell with the fruit & then cover with the other shell. Pinch the edges all around and trim off the excess. Cut vent holes out of the top of the pie in what ever shape/pattern you wish. We tried to do cherries and leaves, but ended up with something that looked more like something you would learn about in grade 7 health class.
Put on a cookie sheet (to catch any juice that comes out) and bake for 30-40 min or until brown and bubbly. Let cool for at least 45 min. You won't want to, but trust me on this one.
